Seth’s onion tart (for Cheryl)
Actually, it’s my recipe but I kindly shared it with him so he would make dinner for totally unselfish reasons
For a tart that feeds 2 (around the size of a standard baking sheet)
Slice 3 medium onions
Fry the onions on a low heat for about 10 minutes so they soften gradually. When they are good and soft add some balsamic vinegar and a little brown sugar and let them caramelise for a couple of minutes.
Roll out some puff pastry (I always use pre-prepared and one sheet is the perfect size) onto a baking sheet. Grate parmesan onto the pastry, leaving a bit of a cheese-free border around the edge (the border will puff up and the cheesy bit will go all soft).
Pour your onions onto the cheese-covered bit of the pastry. Then add some halved green olives, and sprinkle on some oregano.
Bake for about 20ish minutes at 200C.
Eat with salad.
